A fresh watermelon can be kept on the counter for one to two weeks in air conditioning or mild weather.

The recommended temperature for storing a full watermelon, according to the Watermelon Board, is 55 degrees.

Don't worry if your watermelon is ripe but you don't have time to consume it. 

However, do not slice. Put the whole watermelon in the fridge to keep it fresh for another two to three weeks.

The ripening process will be slowed by the refrigerator's chilly temperature.
